Free range pork knuckle is also known as pork shank and is absolutely delicious - dark, intensely flavoursome meat with a complex muscle structure from close to the shoulder joint. It is produced from free range Tamworth rare breed pigs.
This pork has been butchered within 3 days of slaughter and frozen immediately in order to minimise the development of histamine.

Minimum order for courier delivery
The minimum order value for courier delivery is £75. If the items in your basket at the checkout are below that amount, the courier delivery option will not display at the checkout. As soon as the value of the items in your basket go over £75 the courier delivery option will display and you will be able to book courier delivery.
Parcelforce Delivery Options
You will receive an email when you place your order, confirming what you have ordered. You’ll receive a second email from us when we dispatch your parcel. This will include tracking information.
Please ensure the shipping address information which you provide on your order is correct. Check especially that you have provided the correct delivery postcode, the correct street address, a house number and/or an apartment number, a phone number for the shipping address (i.e. the address the parcel is going to), and any other information the courier will need to make the delivery e.g. gate keycodes or any special instructions relating to the delivery address e.g. 'please leave at apartment reception' or e.g. 'flat located at back of property'. Please note we will send the parcel using the shipping address information you have provided and Pheasants Hill Farm Ltd t/a Meat for Health is not liable, and will not issue a refund, if a delivery is delayed or not made at all because the courier could not find the property because insufficient delivery address information was provided by the customer. In particular, if you live in the countryside up a lane which is off a marked road, you will need to provide the GPS coordinates. You can get these by opening google maps and clicking on your house. Please add these as a note to your order, and then we can include these with the address information to help Parcelforce/Royal Mail driver to find the delivery address. Please note - delivery address information cannot be changed once the delivery has been booked with the courier and has left our premises on the morning of the shipment.
Your order will be packed in a special insulated box with ice, and will be delivered within 24 to 48 hours from its collection from our farm. Your order will stay frozen for up to 55 hours, so will be fine if delivery happens on Day 2 after shipment. The Parcelforce/Royal Mail driver will leave the parcel at the delivery address if you are not at home when he/she arrives and you do not need to stay home to sign for it's receipt. You can download the New Royal Mail App to your smartphone and use it to set a safe place location to tell the Parcelforce driver where to leave your parcel if you’re not going to be in. The location can be any secure, weatherproof area of the property, that is safe and easily accessible for the Parcelforce driver. You can also use the Royal Mail App to tell the Parcelforce driver if you have any accessibility issues e.g. if you are hard of hearing or take longer than normal to get to the door. Please note: you have to manage the Royal Mail App yourself. We have no way of selecting a safe place for the parcels, when we make the courier booking.
Pheasants Hill Farm Ltd is not liable for non-delivery or damage due to delayed delivery if you contact the courier directly yourself to rearrange the delivery date or time.
Please unpack your order immediately it is delivered and store the items in your fridge or freezer as appropriate.
How is my order kept cold?
On the cart (basket) page of the checkout, you can opt to upgrade to ship your order in a polystyrene shipping box with wool liners and ice. It is essential to ship in this polystyrene box if your order contains quick frozen/frozen meat. We have tested this box and it will keep meat 100% frozen for at least 55 hours. This is very helpful when the courier delivers your order on the 2nd day after shipment (which happens to about 5% of orders). If you ship your orders in a polystyrene box you can relax - the meat will stay frozen even if the box is in transit for an extra day.
If you do not opt to upgrade to the polystyrene shipping box we will ship your order in our standard parcel box which is a biodegradable corrugated cardboard box lined with plastic then lined with wool insulated sheets and packed with ice.
All parcels to the Republic of Ireland are automatically shipped in a polystyrene box. The supplementary charge for this service is included in the ROI delivery charge which you pay when you checkout.
How is my order shipped?
We ship parcels by Parcelforce courier delivery service. Parcelforce do not deliver on Saturday or Sunday so we do not ship on Fridays.
How long will it take for my order for delivery to arrive?
- We ship orders to NI and GB on Mondays. Tuesdays, Wednesday and Thursday.
- We ship orders to ROI on Mondays, Tuesdays and Wednesdays.
- We need 48 hours to book the courier and prepare and pack the order
- Orders take 24 to 48 hours from collection at our farm to delivery to your address.
- We ship orders as soon as we possibly can and on a first come, first served basis.
- The following shipment days apply normally. During busy periods shipment may take a few more days, as there may be a queue of orders for us to deal with.
- Orders placed by 5pm Monday will be shipped on Tuesday and delivered on Wednesday or Thursday.
- Orders placed by 5pm Tuesday will be shipped on Wednesday and delivered on Thursday or Friday
- Orders placed by 5pm Wednesday will be shipped on Thursday and delivered on Friday or Saturday
- Orders placed on Thursday, Friday, Saturday or Sunday will be shipped on Monday and delivered on Tuesday or Wednesday. (We don't ship on Friday, Saturday or Sunday).
- We will send your tracking number on the day we ship your order.
- Your order can be tracked from 9am on the day after shipment (i.e. the day after it is collected from our farm).
Delivery address information
We cannot book a courier delivery service for customers without a complete delivery address - recipient's name, house number, road, UK postcode town, & parcel recipients email address. We also need any additional information that the courier will need to make the delivery (e.g. keypad code to get in the gate/building, information about the address if it is hard to find e.g. 'up the lane on left hand side marked by the red sign' and a working phone number for the RECIPIENT of the parcel (i.e. at the SHIPPING ADDRESS) (mobile preferred). This is essential as the courier will ring the mobile number of the recipient of the parcel if they can't find the address, or can't get in to the building e.g. if a gate keypad code is required or if they get to the delivery address but can't get an answer at the door.
Bank Holidays
Parcelforce do not deliver on Bank Holidays or Public Holidays.
Email confirmation of shipping date
After you place an order we will send you a confirmation of order email showing the goods you have ordered.
Changing your delivery date or delivery address
You can change your delivery address or shipping date by emailing us or phoning us up to a deadline of 5 pm on the DAY BEFORE your scheduled shipping date. Please note no changes to delivery address or delivery date can be made on the date of shipping - the parcels are collected from our farm early in the morning and the delivery address or delivery date cannot be changed once they are scanned by the Parcelforce driver and taken away from the farm by Parcelforce.

Biodegradable, plastic free meat packaging
We are now packing our minces, sausages, steaks, chicken portions, burgers, braising steaks, casserole cubes, chops, livers and heart in Eco Pouches, which are fully home compostable and biodegradable vacuum packing pouches.
PLASTIC FREE
These pouches are plastic free, that is, not derived from fossil fuels. Eco pouches are PLA FREE (PLA, or polylactic acid, is a processed bioplastic which releases substances that are harmful to health and have the potential to be toxic). They’re made using 100% natural foods stuff ingredients - the main ingredients are paper, eucalyptus fibre, cassava and corn starch – which are made into a plant-based polymer sheet that behaves much like plastic. They are manufactured in the UK.
FULLY COMPOSTABLE
Eco pouches are fully compostable -domestically within 26 weeks at ambient temperatures and within 12 weeks industrially at 60 degrees. This has been externally verified and accredited by internationally renowned safety, quality, and environmental group TUV (Austria) to composting standard SO370 for Industrial and domestic.
OCEAN FRIENDLY
The pouches are also ‘ocean friendly’ with their properties to break down within 26 weeks when exposed to a typical sea environment.
SUITABLE FOR ALL TYPES OF FOOD STORAGE
These Eco Pouch biodegradable Vacuum Pouches are suitable for Sous Vide cooking, ambient, chilled, and frozen food storage. These biodegradeable vacuum Pouches have been approved under the European Directive EC 2002 / 72 for food contact and also confirmed as having no GMOs (genetically modified organisms).
How much meat to order
Here is a general guide - based on average portions.
Turkey - allow approximately 1.5 lbs (675 g per person). For turkeys under 14 lb allow approximately 2 lb (900 g) per portion as the bone to meat ratio is higher for smaller birds.
Goose - allow 2 lbs (900 g) per portion. The biggest geese are only about 11-12 lbs (approx 5.5 kg) so if you need to feed more than 6 people you will need 2 geese.
Chicken (whole, on the bone) - allow 1 lb (450 g) per portion.
Duck - allow 1 lb (450 g) portion.
Pheasant - 1 pheasant feeds 2 people.
Guinea Fowl - 1 guinea fowl feeds 4 people.
Ham, raw. Order 8 oz (225 g) per portion. This will give you 4 oz (110 g) of cooked ham per portion. Ham loses approximately 1/3 to 1/2 its weight in the boiling process, so if you need 2 kg of cooked meat, you should order 4 kg of raw ham.
Meat on the bone (e.g. Rib Roast) - allow 1 lb (450 g) per portion.
Meat, boned (e.g. Rump roast/Topside Roast/Boned Pork Loin) - allow 8 ounces (225 g) per portion.
Meat boned for casserole (e.g. venison casserole pieces) allow 4 oz (110 g) for a casserole with equal vegetable ingredients e.g. mushrooms, onions, carrots. If the casserole meat is just poached in wine, allow 8 oz (225 g) per portion.
